VINEGAR

I use a few sprinkles of vinegar on the carrot salad every single day.

It, along with the salt and olive oil with the long shreds of carrot form a chemical reaction that creates the gut healing effects of the carrot salad that is the basis to the real food eaten daily.

Because this food is one of the “eat everyday” foods, it’s important to find it organic.

Also, because many, me included, can begin to get allergic reactions to enzymes, I prefer to find the organic vinegars that are FILTERED and pasteurized (which are hard to find now), without the floating “mother of vinegar”.

I also suggest finding simple apple cider or rice vinegar.

Look for Organic.

Look for Filtered.

Look for Pasteurized (if you can still find it, to stop some of the fermentation/enzyme action).

Flavored, or specialty vinegars can have sulfites and other allergens. White vinegars, while marvelous for housekeeping, can have been whitened with chemicals leaving residues.

Buy the vinegars in small bottles and not many at a time. With natural vinegars, the fermenting process, even after pasteurization and/or filtering, can somewhat continue and you can begin to find wispy tendrils of process in the bottles if too old.

Here is a very good apple cider vinegar, filtered that should be easy to find. 

We used to be able to find organic, filtered AND pasteurized, but is harder to find these days as products change or get discontinued.

If you are certain you never get allergic reactions to enzymes (and many people are allergic to enzymes, including supplemental enzymes– all of which can cause intestinal distress, heartburn and other), of course you can use regular mother-of-vinegar brands. Do find organic or tested free of pesticides and toxins.

 

And this particular brand is tested to be free of glyphosate and is actually my favorite.

If it’s too acidic/sharp, it can easily be diluted with a bit of filtered or distilled clean water.

Many prefer the apple cider vinegar as they believe there are additional benefits to consuming apple cider vinegar daily for other reasons than the carrot salad.

 

I have no notes from Peat about using vinegar other than on the carrot salad or outside these suggestions but there is a good following for the practice of regular consumption in higher quantities than a few sprinkles.

 

I also regularly use this organic vinegar as it’s more mild and without the use of enzymes.  Be sure to pick up the ORGANIC variety as they also make a non-organic version. It never precipitates anything out. It also has a lower acidic/sharpness than the apple cider vinegars.
