Corn Tortillas, Organic, Nixtamalated

Corn Tortilla  (as a special type)

No-flour corn tortilla, made ONLY with ORGANIC corn, water, lime (NOT as a lime spice or citrus flavor).  1 per day with some shavings of butter, about 1/2 TBL, rolled into it. Eaten chilled not heated.

I was surprised decades ago to learn about nixtamalized corn from Peat. This is actually the ONLY way corn in any form is digestible and actually healthy for the body.

 

Nixtamalized corn meal is also known as masa harina. This masa harina is then used to form tortillas, tamales and other dishes.

When eating corn on a regular and daily basis, it’s really important to ONLY eat the corn that is organic and nixtamalized with lime calcium hydroxide and that are free of any other flour, free of guar gums or other additives. 

If ever possible, buy nixtamalized corn that is not only organic, but tested free of glyphosate.

I have only to date found corn chips thus, but it’s a start and the ones I found could replace this tortilla I use.

The ingredients of the corn tortilla should list organic corn or corn sprouts, water, lime. The package should discuss the process. The “lime” on the package should NOT be the citrus as flavoring, but should be the lime called calcium hydroxide, the processing aid. Sometimes the ingredient list seems to not specify which it is, but reading the packaging should suggest which it is.  Sometimes sending an email to the company will clarify the process.

Peat suggests eating butter or coconut oil with any starch.

 

Daily, I eat one organic (sprouted) corn tortilla made by Food For Life that I eat chilled (not heated like the package says, these tortillas and others are usually already fully cooked).

 

 

 

 

I shave about 1/2 TBLE of butter or so on it and roll it up like a burrito. 

This brand is often found in many health food stores like Natural Grocers and through the co-op natural food delivery company Azure Standard

 

 

And here is the location that sells coconut oil fried, organic nixtamalized corn tortilla chips that would be healthy to eat.

I suggest NEVER eating any brand of corn anything that is not organic or that is made using seed oils. These would be highly toxic.
